Tasty Tuesday: Chewy chocolate chip oreo cookies (with nuts!!)

For the love of all that is holy, y'all need to try these! I was feeling a bit peckish, in the mood for something sweet, luckily my kitchen was stocked with everything I needed to bake the best cookies I have ever eaten, like ever.

You'll need (for 60-70 cookies, depending on the size):
250g butter
450g sugar
2 tbs golden syrup
500g flour (I used half wholewheat and half plain white flour)
1 ts baking powder
1/5 ts salt
200g chocolate
1 pk oreos
30g nuts (I used peanuts, cashews, pistachios and almonds)

-Start by adding butter, sugar and syrup into your mixing bowl and whack it until it's white and fluffy. Add the eggs one by one, stirring after each one. Add the rest of your ingredients and divide into four. Put each part on some wrapping plastic and roll until it looks something like this:
Put the rolls in the fridge for a couple of hours (I had them in the for 4) while you take a nap or troll the internet or, and this is what I did, clean the house.

When you can't wait any longer to cook these bad boys, take them out and remove the plastic. Cut the roll into your desired size and place them on baking trays, mine looked like this:
Cook in the middle of the oven at 175 degrees C for 8-10 minutes depending on size and oven. Enjoy! (-:

Tasty Tuesday: My favorite porrigde

I remember eating this a lot as a child, and would be willing to put money on the fact that my mother used to make this for us while we were growing up. She, on the other hand swear she never made this for us, so I guess I must have gotten the taste for it somewhere else. Either way, it's tasty as F! The dish I'm referring to is "Fløyelsgrøt" or "Smørgrøt" which translates to "Velvetporrigde" or "Butterporrigde". Since leaving home I've made this dish on numerous occations, you don't need a lot of ingredients. Granted, this is not the most balanced of meals, but it is excellent as a comfort food, and we all need some of that love in a bowl once in a while.


The great this about this porridge is that all the ingredients are replaceable, which means it does suit quite a lot of eating philosophies.

Ground recipe:
Serves 2.

1/2 l milk
1 dl flour (I'ce used carob gum several times, 2 tbs is more than plenty for my taste)
25g butter (can be halved or skipped, but it does give the porrigde a nice taste)
1/5 ts salt.

Pour milk and flour in a pan and heat while whisking until smooth. Heat until wanted consistency (about 5 min). Stir in the butter and salt to taste. Serve with sugar (or sweetener) and a crapload of cinnamon. Enjoy (-:

Tasty Tuesday: Honni-corn cake!

I made this for my birthday on friday, and OH MY, it was so tasty! It's very filling, so a small piece goes a long way! It's a marengue layer with the cereal "honni korn" on top and bottom, and inside the cake is one layer of chocolate cream and one layer of plain ole' whipped cream.

You'll need:

Marengue
- 3 egg whites
- 2 dl sugar
- 3 dl Honnikorn (rice crispies and other cereals of that type will do just fine)

Whip the eggwhites foamy. Add the sugar in small amounts and whip every time you've added some. Mix in the honni korn and put the mixture on a baking tray (about 25x30cm). Bake at the bottom shelf of  the oven at 150 degrees C for an hour. As this is both the bottom and the top layer you will have to cut the marengue in to two, after having done this all of one times I highly reccomend you do it as soon as it is out of the oven. Allow to cool.

Chocolate cream
- 3 egg yolkes
- 3/4 dl sugar
-3/4 dl cream
- 50g butter
- 100g dark chocolate (save 3 squares for decoration on top)

Heat egg yolkes, sugar and cream while stirring, don't allow it to boil. When it's a thick cream take it off the heat and add the butter and the chocolate. Allow to cool while you make whipped cream.

Whipped cream filling
- 3 dl cream
- sugar to taste

Put the bottom layer on a tray/plate/whatever. Spread the cold chocolate cream over it in a thick layer. Spread the whipped cream over the chocolate cream and place the top layer gently on top. Melt the remaining chocolate and decorate on top. (I put it in one of those small plastic bags which I put in a bowl with hot water, cut a hole in the corner of the bag and used that to decorate). Serve right away, Enjoy! (-:

Dinner on a budget

So, I've been home alone all week. My boyfriend had to travel for work, and that meant dinners for one. Now, I don't always bother to make dinner for two, so dinners for one are usually out of the question. I might have been known to force one of my friends to come join me for dinner at least once if I'm alone for a long period of time. This week however, I decided to make one big dinner on day one, and then try different variations of that meal through out the week. I got 5 meals out of this, no joke. I could have been a bit more creative the last couple of days as I ran out of both tortillas and cheese the second day due too poor planning ( I also may have snacked on the remainder of the tortillas on day two). Can't blame anyone but myself. But,hey, I was fed everyday and I'm happy about that!

This is how it went:

I used for the main dish:
600g chicken
1 can of kidney beans
1/2 red onion
1 block Halloumi
1 can Tomatoes
1 pk taco seasoning
1 pk tortillas
Cheese

Salad:
1 can sweet corn
1 bag of mixed baby leaf
1/2 red onion
1/3 cucumber
1 avocado

Recipe of the week: Chocolate cake with frosting to die for!

I'm not a fanatic when it comes to food, and if I'm going to eat cake you better believe that baby will be filled with sugar, butter and flour so white you get bloated just by looking at it!

To make this amazing cake you'll need:

Cake:
3 cups sugar
3 eggs
3 ts vanilla sugar
3 Tbs cocoa powder
4 1/2 cups plain white flour
3 ts baking powder
220 g melted butter ( I use half butter and half coconut-oil)
1 1/2 cup milk 
1/2 cup pineapple juice (or orange juice!)

Frosting:
400g butter
200g milk chocolate
200g ising sugar
2 ts vanillasugar
2 eggs

Here's what you do:
- Start with the frosting! Melt the butter and add the chocolate, this needs to melt and then completely cool down. This takes quite a while (we're talking hours, like four of them).

- Now for the cake, I add everything into a mixing bowl, and let your machine do all the hard work. If you don't have a mixing machine of any kind start with all the dry ingredients and add the wet ingredients slowly while whisking.



- Cook your cake at 180 degrees C for 35 minutes  and let it cool

- When the butter and chocolate for our frosting is completely cooled down, to the point where you can tip the bowl over and it stays in place, you can whisk in the rest of the ingredients.

- Frost the hell out of your cake and serve to all your friends, or eat it all by yourself!

Recipe of the week! Let's talk oats

I don't know how recipe-tuesdays turned in to recipe-wednesday this week, but just go with it!
This week is not as much a recipe as it is a breakfast tip. My eating is a mess, I'm not a breakfast person, and when the day starts I forget about anything remotely close to food. If I'm lucky I eat two meals a day, mostly not. I've come in to something of a routine lately of making myself oatmeal for lunch (noon-ish), I only remember because I set a reminder on my phone that says "EAT", it works for me.

A lot of people tell me they don't understand how I can eat oats everyday, because it is so boring.. I almost fell off my chair the first time I heard that. Oatmeal is so versatile and there are hundreds of different ways to make it. So here we go:

To make my oatmeal I use 1 part oats and 2 parts milk (I use 50g oats and 100g milk, keeps me full for hours!). The same applies for overnight oats, just don't boil it ;) If I want to I might add a few ingredients into the oatmeal, those are usually:



- An egg (add the egg and whisk til your arms almost fall off to keep it from separating)
- Spinach
- Dried fruits and berries ( my favorites are raisins, gojiberries and blueberries)
- Proteinpowder
- Peanutbutter
- Cocoapowder
- Nuts
- Seeds
The options are endless, all you need is a bit of imagination

I'm a big fan of toppings and as much as I love my mountain of cinnamon on top of my porridge, sometimes it's good to change your ways a bit
- frozen fruits and berries
-  Chocolate
- Coconut (be it flakes or sprinkles, you choose!)
- Fresh fruits and berries
- Brown cheese (It's a norwegian cheese, and a lot of us use it on top of our porridge. Melts slightly and gives it an amazing taste. Kind of like caramel
- Caramel sauce
- Chocolate sauce

Hopefully, you got a bit of inspiration from this and if you try this, and still find oatmeal/porridge boring I give up (-:

Recipe of the Week: Amazing Herb Dressing

Now, I'll admit I'm not really sure what to call this, but I'm going with dressing for now. I use this for everything. Salads, pizza, salmon, chicken and I might have used it on top of my crisp bread last night! This is originally a recipe from Per Lauritz Liens book "fat enough", but I've tweaked it quite a bit! Due to low blood pressure I need a bit more salt than most, I also like it spicy and use ridiculous amounts of chili sauce and garlic. Adjust the ingredients to your liking! (-:




You'll need:
2 eggs
4 dl olive oil
2 tbs mustard
1 tbs apple cider vinegar
1 ts salt
A shitload of fresh herbs ( I use Basil, Thyme, Parsley and Oregano)
4 cloves of garlic
4 Tbs chili sauce
3 dl greek yoghurt
A squeeze of lemon
Pepper

I just wack everything into a blender and let it do what it does best! This stuff is seriously delicious and so versatile! I use it on everything!

Recipe of the week: Proteinballs

Please ignore the mess that is currently my kitchen. I had taken pictures and didn't realize they were no good until the perfectly round protein-ball was in my tummy. Bummer! These pictures will have to do, of a protein-ball that isn't as pretty, but that tasted just as good! This week I want to share a recipe I use a lot! I do my own spin on Kristine Weber's protein bars.

For four protein-balls you will need:
30 g protein powder ( I opted for chocolate flavored)
15g coconut flour
10g sweetener
1 tbs cocoa powder (Can be skipped!)
10g rolled oats
milk
Coconut sprinkles

Mix all the dry ingredients (except the coconut sprinkles) and add small amounts of milk at the time until the mixture have wanted consistency. Let your mixture sit for a couple of minutes before using two spoons to shape out the balls. This is quite sticky! Roll inn the coconut sprinkles and pop in the freezer to set (-: Enjoy!

My take on Moussaka

For two people you will need:
  • 1 Onion
  • Garlic to your liking, I used 3 cloves
  • 500g minced lamb (minced beef works well too)
  • 1 can crushed tomatoes
  • Herbs ( I used Basil, Thyme, Rosemary, Oregano and Parsley)
  • Salt&Pepper 
  • 1 dl beef stock
  • Oil

  • 2 TBS plain flour
  • 1 Egg
  • 1 TBS Butter
  • 2 dl Milk
  • 3 potatoes
  • Wanted amount of cheese
 


Start by boiling your potatoes if you're not using yesterdays leftovers as i did.  Heat garlic and onion until the onion is soft.

Add the meat

When the meat is done add tomatoes, stock and spices (including salt and pepper, easily forgotten!) Let it simmer on a low heat for 30 min.

In another pan melt the butter. When it's all melted add the flour and whisk in the milk. When the sauce is at wanted consistency add the egg while whisking. Salt and Pepper to taste. Slice the potatoes and put the slices in the bottom of your ovenproof dish (tray?) pour the sauce over and finish with the meat. Cheese on top.Cook in the oven at 200 degrees (centigrade) for 25-30 min depending on your oven.

I was planning on taking pictures of the leftovers the day after in a more appealing light, but managed to quickly take a picture before my boyfriend ate the last of it. I'll take that as a compliment! (-: Enjoy
