Traditions with friends

Yesterday my friend Silje and I went skiing. We do this once a year, and even though I hate skiing so very,very much, I go anyway. Every year.This was our fourth (or fifth?) year going, and the same thing happens every year. I, being a terrible skier use all the strenght my arms provide, dragging myself up and down small hills. She's like a freaking gazelle(!!) and practically does laps around me. Here are some pictures to prove I actually went! I can't wait for next year, when her daughter is coming along. Finally someone who will be having the same speed as me!

Living in black and white.

Some people like living from day to day, not knowing what might happen or what new and exiting adventures lie around every corner. They love with all their heart and embrace every part of who they are. They're not afraid of getting hurt, and throw themselves into new and exiting projects, sometimes before they have time to finish the last one. They travel the world with nothing more than they can fit into a backpack and they have an amazing time. They tell amazing stories, both from their personal life and everything they have seen and done. They share of themselves with every part of their being.

 I wish I was one of those people, I really do. Not knowing what today or tomorrow brings give me anxiety. And traveling the world without knowing where I'm going, how I'm going to get there and the possibility to pack for everything from ice-age to tropical heat? Forget it. Not happening anytime soon. This is why I like lists, I can collect my thoughts, plan ahead and be prepared. I don't like to over share, and I absolutely don't like people knowing every little thing there is to know about me.

I'd like to be able to let go a bit and see where the day takes me, but to be honest I quite like being that way as well. A golden middle would be ideal. I'm not saying I have every part of my day planned, but I like to have a plan with what I'm doing. These days it's mostly studying and household chores, exiting things..

I'm not Charlie.

"I thought I was. But even though I support freedom of speech 100%, I'm not willing to offend others for it.  I'm not willing to risk my life for it. I'm not willing to put those I love and live around in harms way for it. I'm not provocative or brave enough to be Charlie." - Kristiane Aateigen said it perfectly.

I'm torn these days. I'm thankful for living in calm, small Norway. I feel guilty for being thankful. I'm wishing there was something I could offer other than my deepest sympathy. And I'm scared that Norway might be a target.

I'm taken back to July 22nd 2011 and I'm so scared something like that, or worse will happen again. I know I can't go around being scared all the time, but when something like this happens it hits so close to home and just the thought of someone I love being hurt or killed chills me to the core. It's like a nightmare I can't wake up from. It's a constant feeling of being cold, with no way to get warm.

Take care of yourselves and each other, France. I'm with you in thought. X

A letter to my future husband

Hi!

I don't know your name or if we've already met.(Have we met? Have we dated? Am I dating you right now?) But at some point we will. I hope you're passionate and that you follow your dreams, as I am and I will. I hope you let me do my thing (which is all over the place just so you know what you might be getting yourself into. One day I want to be a pop-star, the other a world famous photographer, to be honest I don't think that will happen for me, but it's nice to have dreams) and I will let you do yours

I don't know what you look like or how you personality is, but I know you will have those little quirks that make me fall madly in love with you. Because that's what I do, I fall hard. Like how you always make me laugh when I'm having a bad day or the way you smile in your own special way, or how we can have our own little inside jokes that no-one else will understand. Or how you love your job so much that you can't wait to tell me how your day was, and I'll listen, and I'll soak in every word even though I couldn't care less about accounting (or whatever you job is) because I love that you want to share your day with me.

I hope you're kind to everyone and as including of others as I aspire to be. I want you to be the one I turn to in my time of need, and that I can be the same for you.

... and if you happen to have an amazing accent, dimples and like to cook I'm not complaining at all, just saying.

This might become a problem

Even though I don't really enjoy cooking I have a weird obsession with cookbooks. The thing putting me off the most is having to clean up my own mess when I'm done, but I'm working on it! Every meal I eat in 2015 I intend on being made from scratch (so far, so good six days into the new year. Pat on the back!) My only problem now is the fact that there is no more room for cookbooks, so I have to choose which ones go on display. This is a nightmare..

My take on Moussaka

For two people you will need:
  • 1 Onion
  • Garlic to your liking, I used 3 cloves
  • 500g minced lamb (minced beef works well too)
  • 1 can crushed tomatoes
  • Herbs ( I used Basil, Thyme, Rosemary, Oregano and Parsley)
  • Salt&Pepper 
  • 1 dl beef stock
  • Oil

  • 2 TBS plain flour
  • 1 Egg
  • 1 TBS Butter
  • 2 dl Milk
  • 3 potatoes
  • Wanted amount of cheese
 


Start by boiling your potatoes if you're not using yesterdays leftovers as i did.  Heat garlic and onion until the onion is soft.

Add the meat

When the meat is done add tomatoes, stock and spices (including salt and pepper, easily forgotten!) Let it simmer on a low heat for 30 min.

In another pan melt the butter. When it's all melted add the flour and whisk in the milk. When the sauce is at wanted consistency add the egg while whisking. Salt and Pepper to taste. Slice the potatoes and put the slices in the bottom of your ovenproof dish (tray?) pour the sauce over and finish with the meat. Cheese on top.Cook in the oven at 200 degrees (centigrade) for 25-30 min depending on your oven.

I was planning on taking pictures of the leftovers the day after in a more appealing light, but managed to quickly take a picture before my boyfriend ate the last of it. I'll take that as a compliment! (-: Enjoy
